Grated Raw Beet Salad

This is a recipe that I received from my local organic food box from Re-Root Organic Farm. The recipe taste fantastic, and is a great way to incorporate beets into your diet which are great for your liver.

Ingredients:

  • 4 medium beets, peeled
  • ½ cup olive oil
  • 3 tbsp white wine vinegar
  • 1 tbsp chopped shallots
  • 1 tsp Dijon mustard
  • 1 small clove of garlic
  • Salt
  • Pepper
  • 1-2 tbsp finely chopped dill

Instructions:

  1. Put the grated beets in a large salad bowl.
  2. Combine the olive oil, vinegar, shallot, mustard, and garlic in a large jar.
  3. Shake the jar until the olive oil and vinegar are thickened.
  4. Pour the dressing over the beets and toss until well coated.
  5. Season with salt and pepper and let marinate for an hour in the fridge.
  6. Add dill and serve over fresh greens.
  7. Enjoy!!

  1. reminds me of the situation in edaoctiun. a lot of foreign students come in and pay fees for university the university doesnt increace capacity enough and thus jsut increaces entrance marks it thus undersupplies various key sectors with graduates that will stay in the country (that and hte brain drain in some areas).Same thing for giving police men traffic duties under time pressure all sorts of things in the system like the criteria for going to an emergency will change and by the time it filters through to the “how many more police do you need” stage it gives you far too small a number.—–Behavioural control is the best control. there are a number of problems society must deal with such as lets say negligent drunk driving / murder and society can take steps on a scale from 1) killing the person after the factto 2) a subtle programme of advertsing placing social pressure on people maybe fines etc.I suggest the end of the scale occupied by (2) is the first avenue to try in as far as it does not tie up huge amounts of police time (which is where it all starts to go wrong).

  2. Zeph: a tempting thought. I may well have to throw my hat into the ring if it’s the glories of the SF. A challenge certainly, and one wrapped in memories when I think of those to whom I have introduced the dulcet tones of such as Charlotte Green. Um, must muse on this, and now to bed. 23 mins away from tonight’s forecast. I will try and stay awake.
